This flavor-forward, sweet potato raisin salad is packed with potassium, vitamin A, and fiber and pleases palates from kids to grandparents. Ingredients:

1 medium sweet potato, peeled and cut into 1-inch pieces
¼ cup sour cream
2 green onions, chopped
¼ cup raisins
½ tsp. cinnamon, or to taste
Salt and pepper, to taste

Instructions:

1. Place sweet potato cubes in a medium-sized pot, add water to cover, and bring to a boil.

2. Reduce heat to a simmer and cook for 10 to 15 minutes, or until fork-tender. Drain and place in a medium mixing bowl.

3. Gently stir in sour cream or yogurt, green onions, raisins, and cinnamon; toss to combine well.

4. Add salt and pepper, to taste. Chill and serve.
